Easy Apple and Pear Cake
Today was a perfect baking day, it's cozy and warm indoors and all three boys are at home so I decided to spoil them and bake their favorite cake, a super easy apple pear cake.
I love this cake because you can use fresh fruit or fruits that have been sitting in your fruit bowl a bit too long (in my case), the cake is light and fluffy on the inside and has a nice crust on the outside.
The recipe:
Heat your oven to 350F (180C)
Butter a round springform pan
You will need:
4 apples ( I use Granny Smith but you can use whatever you have)
4 pears
Juice from 1 orange (optional) about 1/4 cup
1 teaspoon of Vanilla extract
4 eggs
1 cup of sugar
1 cup of oil (not olive oil)
2.5 cups of flour
1 tsp. baking powder
1tsp. baking soda
1/4 cup Slivered Almonds
How to:
Peel and cube the apple and pears
Mix together the eggs and sugar
add vanilla
add oil
add orange juice
sift flour together with baking powder and baking soda and add to wet ingredients
mix just until the flour is incorporated into the mixture, don't over mix.
Add apples and pears
mix well
drop mixture into the pan and sprinkle with 2 Tbs of sugar and 1/4 cup slivered almonds.
Bake for 1 hr and 15 minutes until the cake is firm to the touch and golden brown.
I always check the inside of the cake to see if it's fully baked.
